Ingredients
4 boneless, skinless chicken breasts
1 medium zucchini, sliced
1 pint cherry tomatoes
1 small red onion, sliced
3 garlic cloves, minced
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon smoked paprika
Salt and pepper to taste
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese (optional)
Fresh basil for garnish
Instructions
Preheat oven to 375°F (190°C)
In a large bowl, combine chicken breasts, zucchini, cherry tomatoes, red onion, and garlic
Drizzle with olive oil and season with oregano, basil, paprika, salt, and pepper
Transfer mixture to a large oven-safe baking dish
Sprinkle mozzarella and Parmesan evenly over the top
Bake for 25–30 minutes, until chicken is cooked through (165°F) and cheese is golden
Garnish with fresh basil before serving
Notes
Use fresh herbs if available for brighter flavor
Frozen zucchini can be used, thawed and drained
Chicken can be prepped ahead and stored in the fridge
Serve with whole-grain rice or bread for a heartier meal
