Description

Super flavorful, yet uncomplicated, shredded chicken and gravy served over mashed potatoes. This is the comfort food you want when you need a little food lovin’.


Ingredients

Scale
  • 2 large chicken breasts, split lengthwise into thinner breasts; or 4 medium/small chicken breasts
  • 1 tablespoon olive oil
  • Kosher salt & black pepper
  • 3 tablespoon butter
  • 1 tablespoon chicken base (recommended: Better Than Bouillon)
  • 4 tablespoon all-purpose flour
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 2 cups chicken stock
  • ½ cup water
  • ¼ cup heavy cream (optional)
  • Mashed potatoes, for serving

Instructions

1. In a small bowl, mix together the flour, onion powder, and garlic powder. Set aside.

2. Season the chicken breasts lightly with kosher salt and pepper.

3. In a large skillet over medium heat, add olive oil and cook the chicken breasts for about 5 minutes per side, until the chicken reaches an internal temperature of 165°F.

4. Remove the cooked chicken from the pan and set aside.

5. Lower the heat to medium-low, add the butter and chicken base to the pan, and stir to melt.

6. Sprinkle in the flour mixture and stir well to form a roux. Let cook for 30 seconds to 1 minute while stirring.

7. Slowly pour in the chicken stock and scrape up all the bits from the bottom of the pan. Add the water and whisk well to remove any lumps. Let it simmer until thickened.

8. Stir in the optional heavy cream, if using.

9. Shred the cooked chicken and add it back to the gravy along with any collected juices. Let simmer together for a few minutes.

10. Taste the gravy and adjust seasoning if needed.

11. Serve over mashed potatoes, egg noodles, or rice. Enjoy!


Notes

Do not oversalt during cooking—chicken base and stock add plenty of flavor.

Too thick? Add more broth or water.

Too thin? Simmer longer, or thicken with a cornstarch slurry.

Too salty? Add ½ cup water and simmer to dilute.

Needs more flavor? Add onion powder, garlic powder, ground sage, or poultry seasoning.

Great served with peas and garlic bread.

Pairs wonderfully with any mashed potatoes, such as Yukon Gold or Red Skin.
