Description

Zesty chili lime chicken tacos topped with melty cheese, sweet grilled pineapple salsa, and creamy avocado crema for a bold and vibrant meal.


Ingredients

For the Tacos:

  • 1 recipe chili lime chicken
  • 1 recipe grilled pineapple salsa
  • 68 corn tortillas or 4 flour tortillas
  • 1/2 cup Monterey or Pepper Jack cheese (optional)

For the Avocado Crema:

  • 1 medium avocado
  • 1/2 cup sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice (plus more to taste)
  • 1/2 teaspoon salt (plus more to taste)
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon garlic powder

Instructions

1. Prepare the chili lime chicken according to your preferred recipe.

2. Prepare the grilled pineapple salsa and set aside.

3. In a blender, combine avocado, sour cream, mayonnaise, lime juice, salt, cumin, and garlic powder.

4. Blend until smooth, scraping down the sides as needed and adjusting lime juice and salt to taste.

5. Warm the tortillas on a skillet or microwave until soft.

6. Sprinkle cheese onto the tortillas and melt slightly.

7. Top each tortilla with chili lime chicken and grilled pineapple salsa.

8. Drizzle generously with avocado crema.

9. Serve immediately and enjoy.


Notes

Avocado crema can be made up to 4 hours ahead; store in an airtight container with plastic wrap pressed onto the surface.

Use rotisserie or pre-cooked chicken for a quicker version.

Grill tortillas lightly for added smoky flavor.

Adjust spice level by adding more or less chili seasoning to the chicken.
