Description

These Cowboy Butter Chicken Bites are juicy, golden-seared chunks of chicken tossed in a zesty, garlicky cowboy butter sauce with lemon, herbs, Dijon mustard, and a touch of heat.


Ingredients

  • 1.5 lbs boneless skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 2 tbsp chopped fresh parsley

Instructions

1. Season the Chicken: In a bowl, toss chicken pieces with salt, pepper, paprika, and garlic powder.

2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken in batches, cooking until golden brown and cooked through. Set aside.

3. Prepare Cowboy Butter: In the same skillet, melt butter. Stir in garlic, lemon juice, Dijon mustard, red pepper flakes, and parsley. Cook for 1 minute until fragrant.

4. Combine and Finish: Return cooked chicken to the skillet and toss in the cowboy butter until fully coated. Let simmer for 1 more minute.

5. Serve: Garnish with extra parsley and serve immediately.


Notes

These chicken bites are great for appetizers, meal prep, or served over rice or salad. Adjust the red pepper flakes to control the heat. For extra flavor, marinate the chicken for 15 minutes before cooking.
