Description

This Cozy Creamy Cowboy Soup is a hearty one-pot meal made with ground beef, beans, corn, potatoes, and a creamy broth. It’s the ultimate comfort food recipe for busy weeknights and cozy family dinners.


Ingredients

  • 1.5 lbs ground beef (80–90% lean)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 medium potatoes, diced
  • 2 cans beans (pinto, black, or kidney), 15 oz each
  • 1 can corn, 15 oz, drained
  • 1 can diced tomatoes, 15 oz, with juices
  • 4 cups broth (beef or chicken)
  • 1 cup heavy cream or 4 oz cream cheese
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 0.5 tsp smoked paprika
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, green onions, cilantro, crushed tortilla chips

Instructions

1. In a large Dutch oven, brown the ground beef over medium-high heat until fully cooked. Add diced onion and garlic; cook until softened. Drain excess grease if needed.

2. Stir in potatoes, beans, corn, and diced tomatoes (with juices). Pour in broth and mix well. Add chili powder, cumin, smoked paprika, salt, and pepper.

3. Bring to a boil, then reduce the heat and let simmer for 25–30 minutes, stirring occasionally, until potatoes are tender and flavors meld.

4. Lower heat and stir in heavy cream or softened cream cheese. Warm gently until creamy and smooth. Do not boil.

5. Ladle into bowls and top with shredded cheese, sour cream, green onions, and crushed tortilla chips. Serve hot with cornbread or biscuits.


Notes

For extra heat, add diced jalapeños or a pinch of cayenne pepper.

This soup stores well and tastes even better the next day.

To make it lighter, use milk instead of cream or swap for low-fat cream cheese.

You can use any combination of beans based on your preference.
