  • 4 small to medium chicken breasts (or 2 large halved)
  • Salt and pepper
  • 2 tablespoons oil or butter
  • 34 cloves garlic, minced
  • 1 cup light or heavy cream
  • 1 teaspoon Italian seasoning or oregano
  • 1/2 cup grated Parmesan cheese
  • 1 cup chopped spinach (optional)

Instructions

1. Season chicken with salt and pepper on both sides. Heat oil or butter in a skillet over medium-high heat.

2. Cook chicken for 5–6 minutes per side until golden brown and crispy. Remove from skillet and set aside.

3. Lower heat, add minced garlic to the skillet, and sauté for about 30 seconds until fragrant. Pour in cream while stirring continuously.

4. Add Italian seasoning and Parmesan cheese, mixing until smooth. Stir in spinach if using and let simmer for 2–3 minutes.

5. Return chicken to the skillet, spooning sauce over each piece. Simmer for an additional minute before serving hot.


Notes

For extra crispiness, lightly dredge the chicken in flour or breadcrumbs before frying.

Heavy cream yields a richer sauce, but light cream or half-and-half can be used for a lighter version.
