Ingredients
- 2 pounds boneless, skinless chicken breasts or thighs
- 1 (8-ounce) package cream cheese, softened
- 2 (10.5-ounce) cans condensed cream of mushroom soup
- 1 (0.7-ounce) package dry Italian dressing mix
- 1/2 cup chicken broth or water (optional)
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- Salt to taste
- Fresh parsley, chopped (for garnish)
- Hot cooked egg noodles, rice, or mashed potatoes (for serving)
Instructions
1. Pat the chicken dry and optionally season with a pinch of salt, pepper, and garlic powder.
2. Place chicken in a single layer in a 6-quart slow cooker.
3. In a medium bowl, whisk together softened cream cheese, both cans of soup, Italian dressing mix, garlic powder, and black pepper until smooth.
4. Add chicken broth or water to the sauce if a thinner consistency is desired.
5. Pour the sauce evenly over the chicken in the slow cooker.
6. Cover and cook on LOW for 4-6 hours or HIGH for 2.5-3.5 hours, until chicken is fork-tender and reaches 165°F.
7. Remove chicken, shred or chop as desired, then return it to the slow cooker and stir to coat with sauce.
8. Optional: Stir in 1/4 cup heavy cream or a tablespoon of butter for extra richness.
9. Serve hot over egg noodles, rice, or mashed potatoes.
10. Garnish with chopped fresh parsley and serve immediately.
