Ingredients
- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 4 cups low-sodium chicken broth
- 8 oz cream cheese, softened
- 1 cup grated fresh Parmesan cheese
- 1 can (14.5 oz) diced tomatoes (fire-roasted preferred)
- 2 tsp Italian seasoning
- 1 cup pasta (orzo or rotini)
Instructions
1. Chop chicken into bite-sized pieces and mince garlic.
2. Add chicken, garlic, diced tomatoes (with juice), broth, and Italian seasoning to the slow cooker. Stir well.
3. Cut cream cheese into cubes and place on top without stirring.
4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
5. About 30 minutes before serving, stir in cooked pasta until al dente.
6. Just before serving, mix in grated Parmesan until melted.
Notes
Use fire-roasted tomatoes for extra flavor.
You can substitute the pasta type based on preference or what’s available.
Leftovers store well in the fridge for up to 3 days.
