Ingredients
- 2 pounds boneless chicken thighs
- 1/2 cup honey
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 2 tablespoons lime juice
- 2 tablespoons cornstarch (optional)
- 1 teaspoon chili flakes (optional)
- 1/4 cup fresh herbs such as cilantro or parsley, for garnish
Instructions
1. In a bowl, mix the honey, soy sauce, minced garlic, and lime juice until well combined.
2. Place the boneless chicken thighs in the bottom of the crockpot.
3. Pour the sauce over the chicken, ensuring all pieces are well coated.
4. Cover and cook on high for 2–4 hours or on low for 4–6 hours, until the chicken is tender.
5. If a thicker sauce is desired, remove the chicken, whisk cornstarch into the sauce, and cook for an additional 10–15 minutes before serving.
Notes
Store leftovers in an airtight container in the refrigerator for 4–5 days.
Cooked chicken can also be frozen for up to 3 months.
