A delightful dish combining tender chicken, creamy ranch sauce, and Yukon gold potatoes, perfect for busy weeknights or cozy weekend meals.
Ingredients
- 1.5 pounds boneless, skinless chicken breast
- 2 cans cream of chicken soup (10 ounces each)
- 2 packets ranch seasoning mix
- 1 pound Yukon gold potatoes, chopped into chunks
- Grated Parmesan cheese, to taste
Instructions
1. Remove the chicken from its packaging and pat dry with a paper towel.
2. Lay the chicken breasts evenly in the bottom of the slow cooker.
3. In a small bowl, combine the ranch seasoning packets with the cream of chicken soup and stir until well blended.
4. Pour the cream of chicken and ranch mixture over the chicken in the crockpot, ensuring it’s well-coated.
5. Open one of the empty cream of chicken cans, fill it with water, and pour into the crockpot.
6. Chop the Yukon gold potatoes and add them to the crockpot.
7. Cover the crockpot and cook on high for 3 hours or low for 6 to 7 hours.
8. Once cooking time is up, shred the chicken in the crockpot using two forks.
9. Sprinkle freshly grated Parmesan cheese over the top of the chicken and potatoes before serving.
Notes
Use high-quality chicken for better flavor. You can adjust seasoning and add vegetables for customization. Leftovers can be stored in an airtight container for 3 to 4 days in the refrigerator.
