Description

A creamy, savory, hands-off crockpot version of the beloved Marry Me Chicken. Just dump, cook, and enjoy a meal that’s rich, tender, and perfect for busy nights.


Ingredients

  • 4 boneless skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp red pepper flakes (optional)
  • ½ cup sun-dried tomatoes
  • 2 tbsp butter
  • Fresh basil or parsley, chopped (for garnish)

Instructions

1. Pat chicken dry and season generously with salt and pepper on both sides.

2. In a medium bowl, whisk together chicken broth, heavy cream, Parmesan cheese, garlic, oregano, thyme, and red pepper flakes until smooth.

3. Place seasoned chicken breasts in the bottom of the slow cooker.

4. Pour the cream mixture evenly over the chicken.

5. Scatter sun-dried tomatoes over the top.

6. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours.

7. 30 minutes before serving, stir in the butter to enrich and thicken the sauce.

8. Once done, sprinkle fresh basil or parsley over the top.

9. Serve warm with rice, mashed potatoes, pasta, or crusty bread.


Notes

Use chicken thighs for a juicier result if preferred.

Avoid lifting the lid during cooking to maintain even heat.

For a dairy-free version, substitute coconut milk and nutritional yeast.

Add vegetables like spinach, mushrooms, or peas to make it a full meal.

Let the dish rest for 5 minutes before serving to help the sauce thicken naturally.
