Description

Hearty Tuscan ‘Marry Me’ Meatball Soup is a soul-warming dish that combines juicy meatballs with a savory broth and vibrant vegetables. This comforting soup is perfect for cozy dinners or impressing guests on date night. With each spoonful, you’ll experience rich flavors and delightful aromas that make this dish truly irresistible.

Ingredients

Scale
  • 1 lb lean ground beef
  • 1 cup fresh breadcrumbs
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil, chopped
  • 2 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 2 tsp Italian seasoning

Instructions

1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, basil, garlic powder, salt, and pepper. Mix gently to avoid overworking the meat.

2. Shape into golf ball-sized meatballs and place on a parchment-lined baking sheet.

3. Heat olive oil in a large pot over medium heat. Brown half of the meatballs for about five minutes; remove and set aside. Repeat with remaining meatballs.

4. In the same pot, sauté diced carrots and celery until softened (about four minutes). Add diced tomatoes and vegetable broth.

5. Return meatballs to the pot along with Italian seasoning. Bring to a gentle boil, then reduce heat and simmer for about twenty minutes.

6. Serve hot, garnished with additional fresh basil or Parmesan if desired.

Notes

For extra richness, add a splash of heavy cream or a handful of fresh spinach during the last 5 minutes of simmering. Leftovers taste even better the next day as the flavors continue to meld.
