Description
Golden-crisp bite-sized chicken pieces glazed in aromatic garlic butter, finished with lemon zest and fresh herbs. A high-protein, low-carb dish perfect for snacks, appetizers, or main courses.
Ingredients
1.5 lbs boneless, skinless chicken breasts
4 tbsp butter
2 tbsp olive oil
4 cloves garlic, minced
1/4 cup fresh parsley, chopped
1/4 tsp dried thyme
Zest and juice of 1 lemon
Salt and black pepper to taste
Instructions
Cut chicken breasts into 1-inch cubes
Heat olive oil in a skillet over medium-high heat
Once oil shimmers, add chicken and cook for 3-4 minutes per side until golden
Remove chicken and set aside
Add butter to the skillet, let melt
Toss in garlic and sauté 1-2 minutes until fragrant
Mix in herbs, lemon zest, and a splash of lemon juice
Return chicken to the pan and toss to coat
Cook 2-3 minutes until butter glows golden
Season with salt and pepper
Serve warm or store refrigerated for up to 3 days
Notes
Use avocado oil for smoke point stability
Adjust lemon juice to taste
Add 1 tbsp flour for thicker glaze if desired
Serve with steamed broccoli or zucchini
