Description
Lemon Raspberry Swirl Bars are a bright and refreshing dessert that perfectly balances tangy lemon with sweet raspberries. These soft, buttery bars feature a beautiful raspberry swirl and are finished with a light dusting of powdered sugar.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup fresh raspberries or frozen, thawed
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 cup powdered sugar
Instructions
1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
2. In a medium bowl, combine the flour, granulated sugar, and salt.
3. Stir in the melted butter, egg, and vanilla extract until the batter is smooth and well combined.
4. Pour the mixture into the prepared baking dish and spread it evenly.
5. In another bowl, mash the raspberries with a fork until slightly chunky, then stir in the lemon juice and lemon zest.
6. Drop spoonfuls of the raspberry mixture over the batter and use a knife or toothpick to gently swirl it into the batter to create a marbled effect.
7. Bake for 25–30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
8. Allow the bars to cool in the pan for about 10 minutes, then remove and let them cool completely on a wire rack.
9. Once cooled, dust the top with powdered sugar and cut into squares before serving.
Notes
For extra lemon flavor, add 1 teaspoon of lemon extract to the batter.
Blueberries can be substituted for raspberries for a different fruit variation.
These bars are especially refreshing when chilled before serving.
