Ingredients
- Ground Beef: 1 lb
- Onion: 1/2 cup, diced
- Breadcrumbs: 1/2 cup
- Egg: 1 large
- Milk: 1/4 cup
- Salt: 1 tsp
- Pepper: 1/2 tsp
- Macaroni: 2 cups, uncooked
- Cheddar Cheese: 2 cups, shredded
- Butter: 2 tbsp
- Flour: 2 tbsp
- Milk: 2 cups

- Paprika: 1/2 tsp
- Dry Mustard: 1/2 tsp
Instructions
1. Preheat your oven to 350°F (175°C).
2. In a bowl, combine ground beef, onion, breadcrumbs, egg, milk, salt, and pepper. Mix well and press into the bottom of a greased 9×13-inch baking dish.
3. Bake for 20 minutes.
4. While the meatloaf is baking, cook macaroni according to package directions. Drain and set aside.
5. In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk and cook until thickened. Stir in salt, pepper, paprika, dry mustard, and 1 1/2 cups of cheese until melted.
6. Stir cooked macaroni into cheese sauce. Pour over partially cooked meatloaf. Sprinkle remaining cheese on top.
7. Return to oven and bake for an additional 25 minutes or until cheese is melted and bubbly.
