Ingredients
- 4 cups cooked chicken, shredded
- 1 cup sour cream
- 1 cup mayonnaise
- 10.75 ounces condensed cream of chicken soup
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 cup crushed buttery crackers (about 1 sleeve)
- ½ cup unsalted butter, melted
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with non-stick cooking spray or melted butter.
2. In a large mixing bowl, combine the shredded chicken, sour cream, mayonnaise, condensed cream of chicken soup, shredded cheddar, mozzarella, Parmesan, garlic powder, onion powder, oregano, salt, and pepper.
3. Mix until everything is well combined and the chicken is evenly coated.
4. Transfer the chicken mixture into the prepared baking dish and spread it out evenly.
5. In a separate bowl, mix the crushed buttery crackers with the melted butter until well coated.
6. Sprinkle the buttery cracker mixture evenly over the top of the casserole.
7. Bake in the preheated oven for 40 minutes, or until the top is golden and the casserole is bubbling.
8. Remove from oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
Notes
This casserole can be made ahead and refrigerated until ready to bake. Great use for rotisserie chicken or leftovers. Serve with a side salad or steamed vegetables for a complete meal.
