Description

Indulge in the perfect Saint Patrick’s Day treat with these Mint Cheesecake Swirl Brownies. Featuring a rich chocolate base and a vibrant mint cheesecake swirl, they’re as delicious as they are festive.


Ingredients

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/4 teaspoon salt
  • For the Mint Cheesecake Swirl
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 egg
  • 1/2 teaspoon mint extract
  • Green gel food coloring

Instructions

1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.

2. Melt butter in a medium saucepan over low heat. Remove from heat and stir in sugar, eggs, and vanilla. Add flour, cocoa powder, and salt, mixing until just combined. Spread the batter evenly into the prepared pan.

3. Beat the cream cheese with sugar until smooth. Add the egg and mint extract, mixing until well combined. Add green food coloring until the desired color is achieved.

4. Dollop the cheesecake mixture on top of the brownie batter. Use a knife to swirl the two mixtures together.

5. Bake for 35-40 minutes, or until the edges are set but the center is still slightly soft. Allow to cool completely in the pan on a wire rack before cutting into squares.


Notes

For a more intense mint flavor, add a few extra drops of mint extract.

Use gel food coloring for the most vibrant green hue without altering the texture.

Store leftovers in the refrigerator for up to 5 days.
