Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 carrots, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 4 cups vegetable broth
- 2 cups pumpkin puree
- 1 medium apple, peeled and diced
- Salt and pepper to taste
- 1/2 cup cream (optional) For a richer flavor.
- Fresh herbs for garnish
Instructions
1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté until softened.
2. Stir in the garlic, cumin, and cinnamon, cooking for another minute until fragrant.
3. Pour in the vegetable broth and bring to a boil.
4. Add the pumpkin puree and apple, and reduce the heat to a simmer.
5. Cook for about 20 minutes, stirring occasionally.
6. Season with salt and pepper.
7. If desired, stir in the cream for a richer flavor.
8. Puree the soup until smooth using an immersion blender.
9. Serve hot, garnished with fresh herbs.
