Instructions

1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

2. In a large mixing bowl, toss the sweet potato medallions with olive oil, ensuring each piece is lightly coated.

3. In a small bowl, combine the Parmesan cheese, garlic powder, oregano, thyme, smoked paprika, salt, and pepper. Mix well.

4. Sprinkle the seasoning mix over the sweet potatoes and gently toss until they are evenly coated with the cheese and herbs.
