Description

A zesty Italian-inspired pasta salad with al dente tortellini, juicy cherry tomatoes, melt-in-your-mouth mozzarella, and tangy, halal-friendly salami in a light Italian dressing. Perfect for gatherings or a hearty lunch.


Ingredients

12 oz tortellini (fresh or frozen)
6 oz halal-certified salami, finely diced
8 oz mozzarella cheese, cut into 1-inch cubes
1 cup cherry tomatoes, halved
1 cup cucumber, diced into bite-sized pieces
½ cup red bell pepper, finely chopped
¼ cup red onion, thinly sliced
¼ cup olives, sliced (optional, for extra brininess)
½ cup Italian dressing (store-bought or homemade, alcohol-free)


Instructions

Cook tortellini according to package instructions, drain, and let cool.
In a large bowl, combine cooled tortellini, salami, mozzarella, cherry tomatoes, cucumber, red bell pepper, and red onion.
Pour Italian dressing over the salad and toss gently to coat.
Chill for 15–30 minutes before serving.
