- 1 lb boneless, skinless chicken breasts, diced
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 can (14.5 oz) chopped tomatoes
- 6 cups low-sodium chicken broth
- 2 tsp Italian seasoning
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
1. Dice the chicken into bite-sized pieces and chop the garlic, carrots, celery, and tomatoes.
2. In a large pot over medium heat, drizzle olive oil and sauté garlic, carrots, and celery until softened.
3. Add the chicken and cook until golden brown.
4. Pour in the broth and tomatoes; stir in Italian seasoning.
5. Bring to a boil, then reduce heat and simmer for 20 minutes.
6. Garnish with fresh parsley and serve hot.
Notes
For extra richness, add a splash of lemon juice or a handful of small pasta shapes.
