Description

Tender garlic-butter beef bites slow-cooked with creamy potatoes for a rich, comforting, and incredibly flavorful meal.


Ingredients

  • 2 lbs chuck roast or sirloin, cut into 1-inch cubes
  • Salt and black pepper, to taste
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 12 tbsp olive oil (for searing)
  • 1.5 lbs baby Yukon Gold potatoes, halved
  • 6 tbsp butter, melted
  • 5 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • Fresh parsley, chopped (optional, for serving)

Instructions

1. Cut beef into 1-inch cubes and season with salt, pepper, garlic powder, and smoked paprika.

2. (Optional) Heat olive oil in a skillet and sear beef in batches until browned on all sides.

3. Wash and halve baby potatoes, season lightly, and place them at the bottom of the slow cooker.

4. Whisk together melted butter, garlic, thyme, rosemary, beef broth, and Worcestershire sauce, then pour over beef and potatoes.

5. Cover and cook on LOW for 8 hours or HIGH for 4 hours until beef is tender and potatoes are soft.

6. Gently stir, adjust seasoning, and serve topped with fresh parsley.


Notes

For richer flavor, don’t skip searing the beef. Avoid lifting the lid during cooking to maintain heat. Serve with a crisp salad, roasted vegetables, or crusty bread. Leftovers keep for 4 days; reheat gently with a splash of broth.
