Description

An easy, crowd-pleasing slow cooker meal inspired by Frito Pie. Tender, seasoned ground beef and chili beans simmer in a Tex-Mex sauce, then served over crunchy Fritos with your favorite taco toppings.


Ingredients

Scale
  • 1 1/2 pounds lean ground beef
  • 1 cup chopped onion (yellow or sweet)
  • 2 cans (16 ounces each) chili beans (pinto beans in mild chili sauce), do not drain
  • 1 can (8 ounces) tomato sauce
  • 1 can (10 ounces) Original Rotel, do not drain
  • 1 packet (1 ounce) taco seasoning
  • 1/2 cup water
  • Fritos corn chips
  • Cooked rice (optional)
  • Favorite taco toppings (cheddar cheese, lettuce, tomato, jalapeños, sour cream, hot sauce, avocado, lime juice, cilantro)

Instructions

1. Brown the ground beef and chopped onion in a large skillet over medium-high heat until the beef is no longer pink and the onions are translucent.

2. Add the taco seasoning and water to the beef mixture, stir well, and remove from heat. Drain excess fat if needed.

3. Spray the slow cooker with non-stick cooking spray.

4. Add the chili beans, tomato sauce, and Rotel to the slow cooker and stir to combine.

5. Add the browned beef mixture to the slow cooker and mix well.

6. Cover and cook on high for 3–4 hours or on low for 5–6 hours.

7. To serve, add Fritos to individual bowls, top with optional rice, spoon over the beef mixture, and finish with your favorite taco toppings.


Notes

This recipe is perfect for busy days, parties, and game nights.

Serve with rice to stretch the meal or skip it for a classic Frito Pie style bowl.

Leftovers reheat well and make great lunches.

Adjust spice level by using mild or hot Rotel and taco seasoning.
