Description

These three-layer strawberry cheesecake brownies start with a box of strawberry cake mix, followed by a layer of cream cheese frosting, and are topped with a sweet and crunchy strawberry shortcake crumble.

Brownie Ingredients:

  • 1 box strawberry cake mix
  • 1/2 cup salted butter, melted
  • 2 large eggs
  • 2 tablespoons strawberry gelatin

Cream Cheese Frosting Ingredients:

  • 8 oz block cream cheese, softened
  • 1/4 cup salted butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar
  • 12 tablespoons heavy cream

Strawberry Shortcake Crumble Ingredients:

  • 20 Golden Oreos (about 1/2 standard package)
  • 4 tablespoons salted butter, melted
  • 4 tablespoons strawberry gelatin (the remaining amount)

Instructions

1. Preheat the oven to 350°F. Line an 8×8 glass baking dish with parchment paper, spray with non-stick cooking spray, and set aside.

2. Mix together melted butter, eggs, strawberry cake mix, and 2 tablespoons strawberry gelatin in a medium mixing bowl until well combined. The batter will be thick.

3. Use a rubber spatula to spread batter evenly into the prepared baking dish. Bake for 25 minutes, then cool completely.

4. In a separate bowl, beat together the cream cheese, butter, and vanilla until smooth. Add powdered sugar and heavy cream, then beat until light and fluffy.

5. Spread the cream cheese frosting over the completely cooled brownies.

6. In a food processor, pulse Golden Oreos into coarse crumbs with some larger chunks remaining.

7. Sprinkle remaining strawberry gelatin over the Oreo crumbs, drizzle with melted butter, and pulse a few more times until combined.

8. Sprinkle the crumble mixture over the frosted brownies and gently press down.

9. Cut into squares and serve.


Notes

If using a 9×13-inch pan, the brownies will be thinner and require less baking time.

Adding strawberry gelatin to the brownie batter boosts the strawberry flavor and creates a chewier texture.

For serving at parties, cut into 16 smaller squares or 9 larger ones depending on your preference.
