Ingredients
- 4 large potatoes, peeled and diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
1. In a large pot, melt butter over medium heat. Add the chopped onions and minced garlic, cooking until softened.
2. Add the diced potatoes and vegetable broth. Bring to a boil, then reduce to a simmer for about 20 minutes, or until the potatoes are tender.
3. Using an immersion blender, blend the soup until smooth. You can also transfer it in batches to a regular blender.
4. Stir in the heavy cream, thyme, salt, and pepper. Allow it to warm through for another 5 minutes.
Notes
For a chunkier texture, blend only half the soup and mix it back in.
Top with shredded cheese, crumbled bacon, or chives for extra flavor.
