Description

White Lasagna Soup is a comforting and creamy dish that combines the beloved flavors of traditional lasagna with the warmth of a hearty soup. Perfect for chilly nights or family gatherings, this one-pot meal features tender lasagna noodles, savory Italian sausage, and a delicious blend of cheeses.


Ingredients

  • 8 ounces lasagna noodles
  • 1 pound Italian sausage
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons olive oil

Instructions

1. Cook the lasagna noodles in boiling salted water until al dente, then drain.

2. In a skillet, heat olive oil and brown the Italian sausage; remove excess fat.

3. Sauté chopped onion in the same skillet until softened, then add minced garlic.

4. In a large pot, combine cooked sausage, sautéed onions and garlic, chicken broth, Italian seasoning, salt, and pepper; bring to simmer.

5. Stir in cooked noodles and cheeses; simmer for another 5-7 minutes.

6. Serve hot, garnished with additional cheese and fresh basil.


Notes

For a twist, add spinach, mushrooms, or zucchini for extra vegetables.

Serve with crusty bread or a side salad for a complete meal.

Leftovers can be refrigerated and gently reheated on the stove.
