Description

1 1/4 cups dry minute rice (brown or white)
2 lbs boneless skinless chicken breast
1 teaspoon kosher salt
2 Tablespoons olive oil (divided)
24–28 oz broccoli florets
1 cup low-sodium soy sauce or tamari
1/4 cup honey
1 Tablespoon sesame oil
1 Tablespoon rice vinegar
1 teaspoon fresh grated ginger
3 teaspoons cornstarch
8 cloves garlic (minced or grated)
Green onions and sesame seeds for garnish


Instructions

Cook the minute rice according to package instructions using water (approx. 5-10 minutes if using brown rice, start earlier)
Pat chicken dry, cut into 1-inch cubes, and season with salt and pepper
Heat 1 tablespoon olive oil in a skillet, cook chicken in batches until golden and fully cooked (160-165°F), transfer to a plate
Add remaining 1 tablespoon olive oil and char broccoli florets for 2-3 minutes per side
In a bowl, whisk soy sauce/tamari, honey, sesame oil, rice vinegar, ginger, and cornstarch until smooth
Pour sauce into the skillet with broccoli and chicken, simmer 2-3 minutes until glossy and thickened
Top cooked rice with chicken-broccoli mixture and sauce, garnish with green onions and sesame seeds
