Ingredients

1.5 kg beef short ribs
2 large onions, divided
2 tablespoons coriander seeds
2 tablespoons fennel seeds
3–4 whole cloves
4 tablespoons fish sauce
1 tablespoon organic sugar
1 cinnamon stick
2 star anise
400g dried rice noodles
Fresh coriander for garnish
1 lemon, sliced
Seasonal greens for topping


Instructions

Toast the coriander seeds, fennel seeds, cloves, star anise, and cinnamon in a dry pot until fragrant.
Add the beef short ribs to the pot and cover with water, bringing to a boil; skim off any impurities from the surface.
Add one onion (halved) to the pot and reduce to a low simmer for several hours until beef is tender.
Stir in the fish sauce and organic sugar, adjusting to taste.
Cook the rice noodles separately according to package instructions.
Slice the remaining onion thinly for raw garnish.
Place noodles in bowls, top with tender beef, and pour the hot broth over them.
Serve immediately with fresh coriander, raw onion, seasonal greens, and a squeeze of fresh lemon.


Notes

For a clearer broth, you can blanch the beef ribs in boiling water for 5 minutes and rinse them before starting the actual broth simmer. Store leftover broth in the refrigerator for up to 3 days or freeze for up to a month.
