Description

Sweet and savory Asian Mango Glazed Chicken features tender chicken pieces tossed in a vibrant mango glaze with garlic, soy sauce, ginger, and a hint of chili. It’s a bold, tropical-inspired dish perfect served over rice or noodles.


Ingredients

  • 1½ pounds boneless, skinless chicken thighs or breasts, cut into bite-size pieces
  • 1 tablespoon olive oil or sesame oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 ripe mango, peeled and chopped (or 3/4 cup mango purée)
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar or lime juice
  • 2 garlic cloves, minced
  • 1/2 teaspoon fresh grated ginger
  • 1/2 teaspoon chili flakes (optional)
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • Optional for serving: steamed jasmine rice or rice noodles
  • Optional garnish: sliced green onions, toasted sesame seeds, fresh cilantro or Thai basil, lime wedges

Instructions

1. Blend the chopped mango in a blender or food processor until smooth to create a purée. Skip this step if using prepared mango purée.

2. Pour the mango purée into a small saucepan and add soy sauce, honey, rice vinegar, garlic, ginger, and chili flakes. Stir well and bring to a simmer over medium heat.

3. Reduce heat to low and cook for 5–6 minutes to allow the flavors to blend.

4. Stir in the cornstarch slurry and cook for 1–2 minutes until the glaze thickens. Remove from heat and set aside.

5. Season the chicken pieces with salt, pepper, and garlic powder.

6. Heat olive oil or sesame oil in a large skillet over medium-high heat. Add the chicken and cook for 6–8 minutes, turning occasionally, until golden brown and cooked through.

7. Reduce heat to low and pour the mango glaze over the cooked chicken.

8. Toss the chicken to coat evenly and simmer for 2–3 minutes until the glaze thickens and lightly caramelizes.

9. Serve over steamed rice or noodles and garnish with green onions, sesame seeds, fresh herbs, and a squeeze of lime if desired.


Notes

For extra flavor, double the mango glaze and reserve half to drizzle over rice or vegetables.

You can substitute shrimp or tofu for chicken to create a pescatarian or vegetarian version.

Adjust chili flakes depending on your preferred spice level.

Serve with a quick cucumber salad or steamed vegetables for a balanced meal.
