Ingredients

2 cups cremini mushrooms, thickly sliced
3 large carrots, sliced into rounds
2 tablespoons tomato paste
3 cups non-alcoholic dark malt beverage
2 cups beef bone broth
1 tablespoon fresh thyme leaves
2 bay leaves
Salt and freshly cracked black pepper to taste
Fresh parsley for garnish
Instructions
Heat olive oil in a large heavy-bottomed pot over medium-high heat.
Sear the beef cubes in batches until browned on all sides, then remove and set aside.
In the same pot, cook the beef-style savory strips until crispy.
Add the onions, carrots, and mushrooms to the pot, sautéing until softened.

Return the beef and savory strips to the pot.
Add the beef broth, thyme, and bay leaves.

Simmer gently for 2.5 to 3 hours until the beef is fork-tender.
Remove the bay leaves and season with salt and pepper before serving.
Garnish with fresh parsley.
