Ingredients
4 cups chopped romaine lettuce
1 large Bartlett pear, diced
1 large apple, diced
1/2 cup pecans, toasted and chopped
1/3 cup dried cranberries
1/4 cup mayonnaise
2 tablespoons milk
1 tablespoon sugar
1 tablespoon apple cider vinegar
1 teaspoon poppyseeds
Instructions
In a small bowl, whisk together the mayonnaise, milk, sugar, apple cider vinegar, and poppyseeds until smooth to create the dressing.
In a large salad bowl, combine the chopped romaine, diced pears, diced apples, and dried cranberries.
Add the toasted pecans to the bowl.
Drizzle the dressing over the salad just before serving.
Toss gently to coat the ingredients evenly and serve immediately.
Notes
To toast pecans quickly, place them in a dry skillet over medium heat for 3-5 minutes, stirring frequently until fragrant. For meal prepping, store the dressing in a separate container and add it to the salad right before eating to keep the lettuce crisp.
