Ingredients
1 lb cooked chicken, shredded or cubed
1 lb sweet potatoes, peeled and cubed
8 cups shredded kale
1/2 cup roasted almonds, chopped
4 oz crumbled goat cheese
2 medium Honeycrisp or Gala apples, sliced
1 cup uncooked wild rice
1 3/4 cups water
1 lb Brussels sprouts, halved
1 tbsp olive oil
1 tsp salt
Black pepper, to taste
1 1/2 tbsp maple syrup (for sprouts)
1 1/2 tbsp balsamic vinegar (for sprouts)
1/4 cup extra virgin olive oil (for vinaigrette)
2 tbsp balsamic vinegar (for vinaigrette)
1 tsp maple syrup (for vinaigrette)
1/2 tsp Dijon mustard (for vinaigrette)
Instructions
Preheat oven to 400°F (200°C).
Combine wild rice and water in a pot, bring to a boil, then simmer covered for 45 minutes or until tender.
Toss Brussels sprouts with 1 tbsp olive oil, salt, pepper, 1.5 tbsp maple syrup, and 1.5 tbsp balsamic vinegar on a baking sheet.
Toss sweet potatoes with a drizzle of oil, salt, and pepper on a separate baking sheet.
Roast vegetables for 25-30 minutes until tender and caramelized.
Whisk together extra virgin olive oil, 2 tbsp balsamic vinegar, 1 tsp maple syrup, and Dijon mustard for the dressing.
Assemble bowls by layering kale, cooked wild rice, roasted vegetables, sliced apples, and chicken.
Top with crumbled goat cheese and chopped almonds.
Drizzle with the prepared vinaigrette and serve warm.
