Description

Avocado pasta salad is an easy, healthy, and super creamy side dish packed with fresh veggies. It’s perfect for dinner, cookouts, and parties, and is completely vegan, gluten free, and dairy free.


Ingredients

  • For the avocado dressing:
  • 4 cups lightly packed spinach, stemmed
  • Juice from 1 large lemon
  • 2 cloves garlic
  • 3 avocados, cut in half
  • 1/2 teaspoon fine grain sea salt
  • 1/4 teaspoon black pepper
  • 1–2 tablespoons water
  • For the pasta:
  • 16 ounces gluten free pasta (such as chickpea rotini)
  • 4 ears of corn, kernels removed from the cob
  • 1 pint grape tomatoes, halved (about 2 cups)
  • 1/2 cup red onion, chopped
  • 1 avocado, pitted and chopped into 1-inch pieces
  • 1 tablespoon fresh chopped chives
  • 1 1/2 teaspoons fine grain sea salt, plus more to taste
  • 1/2 teaspoon black pepper

Instructions

1. Cook pasta according to package instructions in well-salted water. About 4 minutes before the pasta is done, add the corn to the boiling water and cook until crisp-tender. Drain and rinse pasta and corn under cold running water. Drain well and transfer to a large mixing bowl.

2. In a food processor or blender, combine half of the spinach, the halved avocados, lemon juice, garlic, salt, and black pepper. Pulse until blended, then add the remaining spinach and blend until creamy and smooth. Add 1–2 tablespoons of water if needed to thin. Scrape down the sides as necessary.

3. Add the avocado sauce to the bowl with the pasta and corn. Toss to coat evenly. Add the halved tomatoes, chopped avocado, red onion, chives, salt, and pepper. Toss until well combined. Adjust seasoning to taste. Chill for one hour before serving and serve the same day.


Notes

Store leftovers in an airtight container in the refrigerator and enjoy within 1–2 days for best freshness.
