Flaky baked cod fillets topped with a bright and creamy lemon-dill Greek yogurt sauce, making a quick, healthy, and flavorful weeknight dinner.
Ingredients
- 4 cod fillets (6 oz each)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup plain Greek yogurt
- 2 tablespoons fresh dill, chopped
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon Dijon mustard
Instructions
1. Preheat the oven to 400°F (200°C) and pat the cod fillets dry with paper towels.
2. Place the cod fillets in a baking dish and drizzle with olive oil.
3. Sprinkle minced garlic, salt, and black pepper over the fillets and gently rub to coat evenly.
4. Bake the cod for 12–15 minutes until the fish is opaque and flakes easily with a fork.
5. While the fish bakes, prepare the sauce by mixing Greek yogurt, chopped dill, lemon juice, lemon zest, and Dijon mustard in a small bowl.
6. Season the sauce with salt and pepper to taste and stir until smooth.
7. Serve the baked cod immediately with a generous spoonful of lemon-dill sauce on top.
Notes
Check the fish around the 12-minute mark to prevent overbaking and keep it moist and tender.
For the best flavor use fresh dill and freshly squeezed lemon juice.
Store leftover cod and sauce separately in airtight containers in the refrigerator for up to 2 days.
