Description

This vibrant beet salad is a masterclass in balance, pairing earth-toned roasted beets with the creamy tang of goat cheese and the bright, acidic sweetness of a balsamic reduction. It is a stunning, nutrient-dense dish that is as satisfying as it is beautiful. Whether served as a light main course or a sophisticated side, the combination of tender root vegetables, crunchy walnuts, and peppery greens creates a complex sensory experience that celebrates wholesome, plant-forward eating with minimal effort.

Ingredients

Scale

4 to 5 medium beets
2 tablespoons extra-virgin olive oil
4 cups mixed salad greens
1/2 cup crumbled goat cheese
1/2 cup toasted walnuts
3 tablespoons balsamic glaze
Salt and black pepper to taste

Instructions

Preheat your oven to 400°F (200°C).
Scrub the beets, wrap them individually in foil, and place them on a baking sheet.
Roast for 45 to 60 minutes or until a knife slides through easily.
Let the beets cool, then peel off the skins and slice into wedges.
Arrange the greens on a platter and top with beet wedges.
Sprinkle with goat cheese and toasted walnuts.
Drizzle with balsamic glaze and olive oil, then season with salt and pepper.

Notes

To toast walnuts, place them in a dry skillet over medium heat for 3-5 minutes until fragrant. You can use golden beets for a sweeter flavor profile. Store leftovers in an airtight container for up to 2 days, but keep the dressing separate until serving.
