  • 2 pounds bone-in, skin-on chicken thighs
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 4 ounces cream cheese, softened and cubed
  • 2 cloves garlic, minced
  • 3 tablespoons unsalted butter
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Optional add-ins: spinach, sun-dried tomatoes, or mushrooms

Instructions

1. Season the chicken thighs generously with salt, pepper, and a bit of Italian seasoning. Make sure to coat both sides evenly for maximum flavor.

2. Heat a skillet over medium heat and melt 2 tablespoons of butter. Once melted, add the chicken thighs and sear for 2-3 minutes on each side until golden brown. You don’t need to cook them through—just get a nice sear for extra flavor.

3. Transfer the seared chicken to the crockpot.
