Ingredients
4 cups romaine lettuce, torn
2 boneless, skinless chicken breasts
1/4 cup olive oil
Salt and freshly ground black pepper, to taste
1 cup strawberries, sliced
1/2 apple, chopped
1/4 cup craisins
1/4 cup crushed walnuts
4 oz mozzarella cheese, shredded
Instructions
Preheat grill to medium-high heat.
Place chicken breasts on a plate and drizzle with olive oil. Season with salt and pepper.
Grill chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F. Set aside and let rest briefly.
In a large bowl, add torn romaine lettuce and chopped strawberries.
Add sliced chicken, apples, craisins, and crushed walnuts to the bowl.
Top with shredded mozzarella cheese.
Toss gently or serve as desired. Add additional salt and pepper if needed.
Notes
For a vegetarian version, substitute chicken with grilled tofu or chickpeas.
