Ingredients
For the Crust:
- 1 cup all-purpose flour (or gluten-free flour)
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 large egg yolk
- 2 to 4 tablespoons ice water
For the Blackberry Filling:
- 2 cups fresh blackberries (or raspberries/blueberries)
- 1/2 cup granulated sugar
- 1 tablespoon fresh lemon juice
- 2 tablespoons cornstarch
For the Pistachio Topping:
- 1/2 cup light brown sugar (or granulated sugar)
- 1 teaspoon baking powder
- 1 cup pistachios, shelled and unsalted
- 1/2 cup unsalted butter, cold and cubed
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
Instructions
1. Preheat the oven to 350°F (175°C). In a bowl, whisk together flour, sugar, and salt for the crust. Cut in the butter until coarse crumbs form. Add egg yolk and ice water, mixing until a dough forms. Press into a greased 9×13-inch baking pan and pre-bake for 15 to 20 minutes until lightly golden.
2. In a medium saucepan, combine blackberries and sugar over medium heat. Cook for 5 to 7 minutes until juices release. Stir in lemon juice and cornstarch and cook for 1 to 2 minutes until thickened. Remove from heat and let cool slightly.
3. For the topping, whisk together brown sugar, baking powder, and flour. Cut in butter until crumbly. Mix in egg and vanilla extract, then fold in pistachios.
4. Remove the crust from the oven and spread the blackberry filling evenly over the top. Add the pistachio topping, gently pressing it down.
5. Bake for 30 to 35 minutes until the topping is golden and the filling is bubbly. Allow to cool completely in the pan before slicing into bars.
Notes
Store bars in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days.
Bars can be frozen individually for up to 2 months. Thaw at room temperature before serving.
For extra brightness, add a bit of lemon zest to the filling.
