Description
A creamy and flavorful Blackened Shrimp Stroganoff featuring Cajun-spiced shrimp, tender mushrooms, and roasted red peppers tossed with fettuccini in a rich, savory sauce.
Ingredients
- 1 pound fresh shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 tablespoon Cajun seasoning
- 6 ounces fettuccini pasta
- 1 tablespoon butter
- 3 cups fresh mushrooms, sliced
- 1 tablespoon chopped shallots

- ½ cup sour cream
- 1 tablespoon cornstarch
- 1 cup chicken broth
- 1 (7-ounce) jar roasted red bell peppers, drained and chopped
- 1 tablespoon drained capers
- Salt and pepper to taste
Instructions
1. In a medium bowl, toss the shrimp with olive oil and Cajun seasoning until evenly coated. Set aside to marinate.
2. Bring a large pot of lightly salted water to a boil. Cook the fettuccini for 8 to 10 minutes until al dente. Drain and set aside.
3. Melt butter in a large frying pan over medium heat. Add mushrooms and shallots, cooking until tender. Remove from pan and set aside.
4. In the same pan, cook the seasoned shrimp for 2 to 3 minutes until pink and opaque. Remove and set aside.
5. Add ⅔ cup chicken broth to the pan and bring to a boil. Cook until reduced to about ¼ cup. In a small bowl, mix sour cream and cornstarch, then whisk in 1 cup chicken broth. Stir into the reduced broth and cook until thick and bubbly. Simmer for 1 minute.
6. Return shrimp, mushrooms, roasted red peppers, and capers to the pan. Stir well and heat through. Season with salt and pepper to taste.
7. Serve the shrimp stroganoff over cooked fettuccini and enjoy.
Notes
For extra heat, add a pinch of cayenne pepper or red pepper flakes.
You can substitute Greek yogurt for sour cream for a lighter option.
Be careful not to overcook the shrimp, as they can become rubbery.
Fresh parsley makes a great garnish for added color and freshness.
