Description

Blackstone Bourbon Chicken is a sweet and savory griddle recipe featuring tender chicken thighs seared on the flat top and tossed in a sticky bourbon soy glaze with garlic, ginger, and brown sugar.


Ingredients

  • 2 1/2–3 pounds boneless skinless chicken thighs, trimmed and cut into 1-inch pieces
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons cornstarch
  • 2–3 tablespoons neutral oil for the griddle
  • 1/2 cup bourbon
  • 1/3 cup low-sodium soy sauce
  • 1/2 cup packed light brown sugar
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons rice vinegar
  • 1 tablespoon ketchup
  • 3 cloves garlic, minced
  • 2 teaspoons fresh grated ginger
  • 1/2–1 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 2–3 green onions, thinly sliced
  • Toasted sesame seeds (optional)
  • Steamed rice, cauliflower rice, or lettuce cups for serving
  • Steamed broccoli for serving

Instructions

1. Whisk together bourbon, soy sauce, brown sugar, honey, rice vinegar, ketchup, garlic, ginger, and red pepper flakes in a small metal cup or saucepan to make the sauce.

2. Preheat the Blackstone griddle to medium-high heat.

3. Pat the chicken pieces dry and toss them with kosher salt, black pepper, and 2 tablespoons cornstarch until lightly coated.

4. Add neutral oil to the hot griddle and spread the chicken in a single layer without crowding.

5. Sear the chicken undisturbed for 2–3 minutes until browned, then flip and cook another 3–5 minutes until fully cooked to 165°F.

6. Cook in batches if necessary and move finished chicken to a warm zone on the griddle.

7. Place the prepared sauce in a metal cup or pan on the griddle over medium heat and simmer for 2–3 minutes.

8. Stir together 1 tablespoon cornstarch with 2 tablespoons cold water to create a slurry, then whisk it into the sauce.

9. Cook the sauce for 1–2 minutes until thickened and glossy.

10. Return all chicken to the hot zone of the griddle and pour the sauce over it.

11. Toss the chicken with spatulas until evenly coated and the glaze clings to the pieces.

12. Sprinkle with sliced green onions and toasted sesame seeds before serving.


Notes

Lightly coating the chicken with cornstarch helps create better browning and allows the sauce to cling to the meat.

Cook the chicken in batches if needed to avoid overcrowding the griddle and ensure a good sear.

Serve over steamed rice with broccoli, cauliflower rice for a lower-carb option, or in lettuce cups.

You can substitute apple juice for bourbon if you prefer a non-alcoholic version.
