Ingredients
- 1 cup unsalted butter (melted)
- ½ cup granulated sugar
- 2 cups all-purpose flour
- 8 ounces cream cheese (softened)
- 1 cup granulated sugar
- 2 large eggs
- 3 cups blueberries (fresh or frozen)
- Zest of 1 lemon
- 1/4 teaspoon salt
- 1/4 cup plain yogurt
Instructions
1. Preheat your oven to 350°F (177°C) and line an 8″ x 8″ pan with parchment paper for easy removal.
2. In a bowl, combine melted butter, ½ cup sugar, lemon zest, and salt. Gradually add 2 cups flour until combined to form the crust.
3. Press the crust mixture into the lined pan and bake for about 15 minutes.
4. In another bowl, mix softened cream cheese with 1 cup sugar and lemon zest until smooth.
5. Add eggs one at a time, mixing well after each addition.
6. Mix in yogurt and 2 tablespoons flour until smooth.
7. Gently fold in the blueberries.
8. Pour the filling over the pre-baked crust and bake for an additional 25-30 minutes or until set.
9. Allow to cool completely before slicing into squares.
Notes
These bars can be stored in the refrigerator for up to 5 days.
For a neater cut, chill the bars thoroughly before slicing.
You can use frozen blueberries, but do not thaw them before folding into the batter.
