Description

Blueberry Peach Feta Salad is a refreshing summer salad with the perfect balance of sweet, salty, and fresh flavors. Juicy peaches and blueberries combine with crisp cucumbers and creamy feta, all tossed in a bright lemon basil vinaigrette.


Ingredients

  • 1 pint fresh blueberries
  • 2 peaches, diced
  • 2 Persian cucumbers, sliced
  • 1/2 cup crumbled feta cheese
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 tablespoon finely chopped fresh basil
  • Kosher salt, to taste
  • Fresh ground black pepper, to taste

Instructions

1. In a large serving bowl combine the blueberries, diced peaches, sliced cucumbers, and crumbled feta cheese.

2. In a jar with a lid or a measuring cup, combine the lemon juice, Dijon mustard, honey, olive oil, chopped basil, salt, and pepper.

3. Shake or whisk the vinaigrette until well combined.

4. Pour the vinaigrette over the salad ingredients.

5. Gently toss everything together until evenly coated.

6. Taste and adjust seasoning if needed, then garnish with additional fresh basil before serving.

7. Serve immediately or cover and refrigerate until ready to serve.


Notes

This salad is best served fresh but can be refrigerated for a few hours before serving.

Use ripe but firm peaches so they hold their shape in the salad.

If Persian cucumbers are unavailable, substitute with English cucumber.

Add toasted nuts such as almonds or pecans for extra crunch.

Fresh basil adds brightness, but mint can also be used for a slightly different flavor.
