Description

This Caprese Pasta Salad with Balsamic Glaze is a fresh and flavorful dish combining cherry tomatoes, mozzarella, and basil with al dente pasta, all drizzled with a tangy balsamic glaze. It’s quick to make, perfect for warm-weather gatherings, and can be enjoyed as a side dish or a light meal.

  • For the Salad:
  • 12 ounces pasta (rotini, penne, or bowtie)
  • 1 ½ cups cherry tomatoes, halved
  • 8 ounces fresh mozzarella, diced or use mozzarella balls
  • ½ cup fresh basil, chopped or torn
  • 2 tablespoons extra virgin olive oil
  • Salt and black pepper to taste
  • For the Balsamic Glaze:
  • ½ cup balsamic vinegar
  • 1 tablespoon honey or brown sugar

Instructions

1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool it down quickly and prevent sticking.

2. While the pasta cools, halve the cherry tomatoes, chop or tear the basil leaves, and dice the mozzarella (or use whole mini mozzarella balls).

3. In a small saucepan over medium heat, combine the balsamic vinegar and honey (or brown sugar). Bring to a simmer and let it reduce until it thickens slightly, about 5–7 minutes. Remove from heat and let it cool.

4. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, mozzarella, and basil. Drizzle with olive oil and season with salt and pepper. Toss gently to coat everything evenly.

5. Drizzle the balsamic glaze over the salad just before serving. Toss lightly to distribute the flavors.


Notes

You can make the balsamic glaze in advance and store it in the refrigerator. Let it come to room temperature before using.

This salad can be made ahead and stored in the fridge for up to 2 days, though it’s best served fresh.

Feel free to add grilled chicken or avocado for extra protein and flavor.
