Description

A vibrant, nourishing salad combining crunchy carrots, sweet apples, tangy cranberries, and citrusy mandarins in a creamy vanilla yogurt-mayo dressing. Perfect for potlucks, snacks, or meal accompaniments.


Ingredients

2 medium carrots, peeled and grated
1 red apple, cored and thinly sliced
1 green apple, cored and thinly sliced
1/4 cup dried cranberries
1/2 cup mandarin oranges (fresh or canned in juice)

Instructions

Peel and grate carrots
Core and thinly slice both apples
In a large bowl, combine grated carrots, sliced apples, cranberries, and mandarin oranges

Pour dressing over salad mixture and toss gently to coat
