Description

This vibrant and grounding soup combines the natural sweetness of roasted carrots with the subtle, warming heat of fresh ginger. 1 tablespoon canola oil
1 medium yellow onion, finely diced
2 cloves garlic, minced
3 teaspoons fresh ginger, freshly minced
4 cups carrots, peeled and sliced into thin coins
1 can (400ml) full-fat coconut milk
4 cups vegetable broth (low-sodium preferred)
3 tablespoons Thai red curry paste (shrimp-free)
1/2 cup raw cashews (soaked for 30 minutes)
1/3 cup maple syrup
Sea salt to taste
Cracked black pepper to taste
Fresh cilantro for garnish


Instructions

Warm the Instant Pot on the Sauté setting.
Add canola oil and diced onions with a pinch of sea salt, cooking until translucent.
Stir in the minced garlic, ginger, and curry paste, sautéing until fragrant.
Add the sliced carrots, coconut milk, vegetable broth, and soaked cashews.
Seal the lid and set to Pressure Cook on High for 15 minutes.
Allow for a natural pressure release for 10 minutes, then quick release remaining pressure.
Stir in the maple syrup.
Use an immersion blender to process the soup until completely smooth and creamy.
Season with salt and pepper to taste.
Serve warm, garnished with fresh cilantro.


Notes

Soaking cashews is crucial for achieving a perfectly smooth, velouté texture. If you don’t have an Instant Pot, you can simmer the mixture in a large pot on the stove for 25-30 minutes until carrots are tender. Store in an airtight container in the refrigerator for up to 5 days. This soup also freezes very well.
