Description

Ingredients

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 12 oz rotini pasta
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 1 tablespoon butter
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup fresh parsley, chopped

Instructions

1. Bring a large pot of salted water to a boil and cook the rotini until al dente, about 8–10 minutes. Drain and set aside.

2. Heat olive oil in a large skillet over medium-high heat. Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook for 6–7 minutes until golden and fully cooked. Remove and set aside.

3. Reduce heat to medium and melt butter in the same skillet. Sauté minced garlic for about 1 minute until fragrant.

4. Pour in chicken broth and heavy cream, stirring gently. Bring to a simmer.

5. Stir in mozzarella, Parmesan, and cheddar cheese until melted and smooth.

6. Return cooked pasta and chicken to the skillet, tossing to coat in the sauce. Simmer for 2–3 minutes until heated through and slightly thickened.

7. Remove from heat, garnish with chopped parsley, and serve hot.


Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days.

For a vegetarian option, substitute chicken with sautéed mushrooms or seasonal vegetables.

Use freshly grated cheese for the smoothest and creamiest sauce.
