Description

Chick-fil-A Chicken Tortilla Soup is a comforting and hearty copycat recipe featuring beans, corn, chicken, and bold Tex-Mex flavors.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 teaspoon cumin
  • 2 teaspoons oregano
  • 2 teaspoons salt
  • 3 cans Great Northern beans (15 oz each)
  • 2 cans Rotel (10 oz each)
  • 1 can cream-style corn (15 oz)
  • 1 can corn with peppers (15 oz) or substitute with regular canned corn
  • 1 can black beans (15 oz)
  • 1 lb cooked shredded chicken
  • 2 tablespoons lime juice
  • Toppings of choice (tortilla strips, shredded cheese, sour cream, etc.)

Instructions

1. Heat olive oil in a large pot over medium heat.

2. Add in the garlic and onion. Sauté for a few minutes.

3. Stir in the cumin, oregano, and salt.

4. Add 2 cans of northern beans to the pot and use an immersion blender to puree the beans, keeping some texture. (Alternatively, use a regular blender.)

5. Add in the Rotel, creamed corn, whole kernel corn, and shredded chicken.

6. Mix in the remaining northern beans and black beans, stirring to fully incorporate.

7. Let soup simmer for about 15 minutes.

8. Stir in the lime juice and adjust seasonings to taste.

9. Serve hot with desired toppings.


Notes

Do NOT drain any of the cans; include the liquid as it contributes to the soup’s texture and flavor.

For extra spice, consider adding diced jalapeños or a pinch of cayenne pepper.

This soup freezes well—store in an airtight container for up to 3 months.
