Description

Chimichurri chicken soup is an elegant and nourishing twist on classic comfort food, featuring tender chicken thighs, creamy white beans, and aromatic vegetables in a savory broth. 4 large cloves garlic, minced
3 cups fresh Italian parsley, packed
1 cup fresh cilantro, packed
1/2 medium shallot, minced
2 tablespoons dried oregano
1 tablespoon red chili pepper, finely chopped
1 tablespoon paprika
3/4 teaspoon kosher salt
1/4 teaspoon hot pepper flakes
1/3 cup olive oil
1/4 cup fresh lemon juice
2 tablespoons olive oil
2 tablespoons unsalted butter
1 large yellow onion, finely chopped
1 1/2 cups celery, sliced
2 cloves garlic, minced
2 teaspoons salt
1.75 lbs boneless skinless chicken thighs
8 cups chicken stock
2 cans (15 oz each) white beans, drained and rinsed


Instructions

In a food processor, pulse garlic, parsley, cilantro, shallot, oregano, chili, paprika, salt, and pepper flakes until finely minced.
Whisk in olive oil and lemon juice to create the chimichurri sauce and set aside.
In a large pot, melt butter and olive oil over medium heat.
Sauté onion, celery, and garlic until softened.
Add the chicken thighs and brown them slightly on both sides.
Pour in chicken stock and bring to a simmer for 20 minutes until chicken is cooked through.
Remove chicken, shred with two forks, and return to the pot along with the white beans.
Simmer for an additional 10 minutes to allow flavors to meld.
Serve hot, ladling a generous spoonful of the fresh chimichurri sauce over each bowl.


Notes

Store the chimichurri sauce separately from the soup in the refrigerator for up to 3 days to maintain the vibrant green color and freshness. Shredded rotisserie chicken can be used for a faster prep time.
