Ingredients
1.5 lbs chicken thighs, boneless and skinless
1 tablespoon olive oil
1 medium onion, diced
2 carrots, chopped
2 stalks celery, chopped
6 cups chicken bone broth (alcohol-free)
1 can (15 oz) cannellini beans, rinsed and drained
4 cloves garlic, minced
3 cups fresh Italian parsley, finely chopped
1 cup fresh cilantro, finely chopped
1/2 medium shallot, minced
2 tablespoons dried oregano
1 tablespoon fresh red chili pepper, finely chopped
3 tablespoons extra virgin olive oil (for sauce)
2 tablespoons red wine vinegar (substitute with apple cider vinegar to ensure alcohol-free)
Sea salt and cracked black pepper to taste
Instructions
In a large pot, heat olive oil over medium heat and sear chicken thighs until golden brown.
Add onion, carrots, and celery, cooking until softened.
Pour in chicken broth and bring to a gentle simmer.
Stir in the white beans and cook for 20-25 minutes until chicken is cooked through.
Shred the chicken directly in the pot using two forks.
Prepare the chimichurri by whisking together minced garlic, parsley, cilantro, shallot, oregano, chili, olive oil, and vinegar in a bowl.

Ensure the vinegar used is strictly alcohol-free by selecting apple cider vinegar or white vinegar. To make ahead, store the chimichurri separately from the soup, as the herbs will stay greener and brighter when added fresh at the time of consumption. If you prefer a thicker soup, mash a few of the white beans against the side of the pot during the simmering stage.
