Ingredients
1.5 lbs boneless chicken breasts
1/4 cup lime juice
1/4 cup chopped fresh cilantro
2 cloves garlic (minced)
2 tsp chili powder
1 tbsp olive oil
2 cups cooked jasmine rice
Peach salsa ingredients:
– 2 ripe peaches (diced)
– 1/2 red onion (finely chopped)
– 1/2 red bell pepper (diced)
– 1/4 cup lime juice
– 1/4 cup fresh cilantro (chopped)
– 1/2 tsp chili powder
Instructions
1. Marinate chicken: Combine lime juice, chopped cilantro, garlic, chili powder, and 1 tbsp oil in a bowl. Add chicken breasts and let sit 15-30 minutes.
2. Cook chicken: Heat remaining oil in a skillet. Sear chicken breasts over medium heat until golden (4-5 minutes per side). Finish in the oven at 375°F (20-25 minutes) until fully cooked.
3. Prepare salsa: Mix peaches, onion, bell pepper, lime juice, cilantro, and chili powder. Adjust seasoning with salt if desired.
4. Serve chicken atop rice bowls, topped with peach salsa and fresh cilantro garnish.
Notes
Chicken can be grilled instead of pan-seared. Salsa can be made 1 day ahead. Substitute peaches with mango or pineapple. For meal prep, store components separately for up to 3 days.
